Was explored research of pork in Ipatovo department of Stavropol territory on standard methods which accept on veterinary-sanitary examination of meat and meat products. According to the research founded out that most cases of infection pigs by echinococcosis were detected in 2012. Research pieces of meat from animals which infected echinococcosis had nice, specific for animal each species flavor. Herewith from meat and liver which affected by echinococcosis was discharged culture of Bacillus subtilis, whereas from the carcass of health pigs often discharged culture of Staphylococcus xylosus. Content of amino-ammoniacal nitrogen in 10 ml extract from pork composed on the average 1,26 mg. Results of measuring pH in extract from pork - 6,4. Reaction on peroxidases in research pork - negative. Meat which received from infected echinococcosis animals recommend to direct on production of sausages.
